After a year away, Kimbeaux’s Kitchen is parking its wheels and opening its window for its Fall 2025 service dates.
Kimbeaux’s Kitchen, Nicholls’ very own food truck, is located in the student parking lot of Ledet Hall.

The truck will be open every Friday, Oct. 11 to Nov. 21, from 11:30 a.m. to 1 p.m. Each week revolves around a certain theme, including barbecue, fried fish, street food and Southern classics.
Both entrees and desserts will be available. Prices will range from $4 to $16, with only cash and checks accepted.
Led by instructor Chef Gregory Rosary, the truck is run by the heart of the institute—the students.
“These operations show the public that the school is really putting the student first,” Rosary said. “It’s almost giving back to the community, doing student-led events. It takes a village, and here in Thibodaux, that village wants to see the students succeed.”

To participate in Kimbeaux’s Kitchen, culinary students must first serve in Bistro Ruth.
After they have gained experience in a restaurant setting, they are able to register for Rosary’s food truck operation.
All aspects of this truck are controlled by the students, from designing the menu based upon the weekly theme to creating and serving every item.
“Everything’s going to be made from scratch,” Rosary stated. “Fresh and hot, from smiling—maybe running around—staff.”
The operation faces a unique challenge this semester, that being that the class consists of only a handful of students—four, to be exact.
Regardless, Rosary is optimistic that the operation will run smoothly.
While parked year-round, the truck opens for service during the fall semesters.
Although the trailer has provided service as early as 2020 to serve food to Lake Charles residents following Hurricane Laura, this year is considered its first full year of service.
The restaurant industry is rife with ever-growing challenges.
Participating in a short-staffed, busy food truck is an experience that will only help students hone their problem-solving skills. All the while, showing the community that they will prevail while serving up delicious food.
