Recipies for when you’re on the go

Many students are constantly faced with the problem of deciding what to eat. The wide variety of restaurants are not always desirable, and the cafeteria is not always the first choice for students.

Students wonder, since they are not great cooks, what they can fix for themselves.

Since all of these recipes are fast and easy, all students, including those who live in dorms and apartments, can prepare these tasty meals.

The first recipe is a beef dish, called the 15 minute dinner nachos supreme.

Ingredients: 1 lb. ground beef, 1 package of taco seasoning mix (1.25 oz), 1 can tomato soup, 1 1/2 cups of water, 11/2 cups uncooked white rice, chunky salsa, shredded cheddar cheese and lettuce, and tortilla chips.

Directions: Cook beef and taco seasoning in skillet until browned, stirring often. Pour off fat. Add soup, water and rice. Heat to a boil. Cover and cook over low heat for 5 minutes, or until done. Top with salsa, cheese and lettuce. Serve with tortilla chips for dipping. This meal serves four people.

The second recipe is a chicken dish, called the 25 minute chicken parmesan.

Ingredients: 4 boneless and skinless chicken breasts halves, 1 egg, slightly beaten, 1/2 cup seasoned bread crumbs, 2 tablespoons butter or margarine, 1 3/4 cup spaghetti sauce, 1/2 cup shredded mozzarella cheese, 1 tablespoon grated parmesan cheese, and 1/4 cup chopped fresh parsley.

Directions: Using the palm of the hand, flatten chicken to even thickness. Dip chicken into egg, then into crumbs to coat. In skillet over medium heat, in hot margarine, brown chicken on both sides. Add sauce. Reduce heat. Cover, then simmer for 10 minutes. Sprinkle with cheese and parsley. Cover, simmer for 5 more minutes, or until cheese melts. This meal serves four.

The third recipe is a seafood dish, called coconut fried shrimp. This dish takes 10 minutes to prepare and serves four.

Ingredients: 1/2 pound unpeeled medium-size fresh shrimp, 3/4 cup pancake mix, 3/4 cup beer, vegetable oil, 1/4 cup all-purpose flour and 1 cup flaked coconut.

Directions: Peel shrimp, leaving tails intact; de-vein if desired. Combine pancake mix and beer in a small bowl, stir until smooth. Pour oil to depth of 2 inches into a Dutch oven, heat to 350 degrees Fahrenheit. Dredge shrimp in flour, shake off excess. Dip shrimp into batter, dredge in coconut. Fry, a few at a time, 45 seconds on each side, or until golden brown. Drain on paper towels.

The fourth recipe is a vegetarian dish called blue cheese vegetable pizza.

This meal can be prepared in 15 minutes, and it serves six people.

Ingredients: 3 small zucchini, thinly sliced, 3 stalks celery, thinly sliced, 2 carrots, peeled and grated, 1 tablespoon olive oil, 3 sandwich-size English muffins, split and toasted, 1 14-ounce jar of Pizza Quick Sauce, and 2 tablespoons blue cheese, crumbled.

Directions: Preheat broiler. In a large skillet, saut vegetables in olive oil until tender. Top each toasted muffin half with 2 tablespoons pizza sauce, sauted vegetables and cheese. Broil 6 inches from heat for 4 – 6 minutes, or until cheese melts.
