Foodies on campus can look forward to a week of flavorful dishes during “Chef Celebration Week”, while Dining Services has forecasted a busy month for October.
The Vernon F. Galliano Dining Hall will be participating in Chef Celebration Week from Monday through Wednesday. Three local chefs will showcase their dishes from 10:30 a.m. to 2 p.m. in events that aim to “celebrate culture, cuisine and community.”

Chef Raykim Goslar will combine his respect for his Indigenous heritage with his passion for cooking on Monday.
Goslar received his formal culinary training at Delgado Community College in New Orleans, after which he cooked in large-scale institutions such as the Superdome and Smoothie King Center.
A proud member of the Taos tribe, he will use his extensive culinary knowledge to serve frybread tacos and Oneida soup. It is a soup associated with the Oneida Nation of Wisconsin.
Traditionally, it is a white corn soup containing both kidney and pinto beans, as well as smoked pork hocks.
Tuesday, the dining hall will feature Chef KJ Townsend.
Louisiana-born and a native of nearby Houma, Townsend is the owner of Houma’s Fat Boy Phillies.

Not only does he operate the food truck, but he also runs the restaurant’s Southland Mall location.
In 2022, Townsend was one of the 14 top Louisiana chefs to participate in Louisiana Culinary Trails’ “Louisiana x Charlotte Restaurant Night.”
In partnership with organizations such as Explore Houma and the Louisiana Office of Tourism, Townsend brought a Louisiana flair to Charlotte, North Carolina.
Aiming to add that same Southern twist on classic dishes, he will showcase his special crawfish mac-and-cheese, as well as fried fish.
Chef Cardell Smith will wrap up the celebration on Wednesday with boudin birria tacos and gumbo au jus.

Founder and owner of the nearby Kajun Kidd Burgers and Wings, Smith has a variety of experience in the culinary field.
Not only has he been a chef at the esteemed Ritz-Carlton in both New Orleans and Buckhead, Ga., but he also worked as a private chef for NFL players such as the Carolina Panthers’ Jarius Byrd.
Smith took the screen as well, participating in Food Network’s Cooks versus Cons season five.
