Sodexo-run Vernon F. Galliano Hall Cafeteria is running without any health risks, contrary to rumors spread through the student body.
With written proof to solidify his statement, Richard Curtis, executive chef for the cafeteria, said he passed all of his health inspections with “flying colors.”
An internal audit recently done by Sodexo inspected the cafeteria on topics including food handling and safety. Having to score above a 90 to pass, the cafeteria received a 95 and 96.
A safety audit was also done, Curtis said, to ensure that all visitors and workers were out of harm’s way throughout their dining or work experience. Auditors took off points because there was no company safety policy or choking first aid poster posted on the bulletin board for patrons to observe.
Curtis said the bulk of the points lost came from the training portion of the audit. Signatures must be presented for each employee that goes through the training process.
“They took a significant amount of points away because I was supposed to have 59 signatures, and I had 57.”
He explained that a lot of his employees are only present for catering or concession events, and the auditors were counting those figures into the required number of signatures.
“They only come in once every two or three months, so they weren’t here for the original training.”
Within days of being audited, Curtis said all necessary posters and policies were posted, and everyone was retrained to ensure that everything was up-to-date. He now has more than the required number of signatures he needs.
Curtis said the audit gave the cafeteria a chance to evaluate their performance and be even greater than before.
“I used the audit as an opportunity to make the whole operation better.”
