The best and worst part of any game night or party is the food. Many students are trying to avoid the dreaded “freshmen 15” or more, depending on eating habits.If you are on a diet or just watching what you eat, then the best thing for you to do is offer to bring some snacks. This is your chance to help out a friend and your waistline at the same time. Instead of potato chips or French fries, try the sweet potato variation of the same snack. Incorporating more fruit as snacks for dipping is also a healthier option.
Try these recipes for your next party or poker night.
Yummy Fruit Dip
1 8-oz. package cream cheese, softened
2 tablespoon orange juice
1 jar marshmallow cream
Soften cream cheese. Mix ingredients together. Refrigerate until ready to serve. Serve with fresh fruit.
Makes 15 one-tablespoon servings.
Pumpkin/Peanut Butter Dip
3/4 cup peanut butter
3/4 cup canned pumpkin
3/4 cup brown sugar
1/2 teaspoon vanilla
Combine all of the ingredients. Cut apples, bananas and other fruit into bite-sized pieces to serve with the dip.
Makes 20 to 24 one tablespoon servings.
Taco Wings
Whisk together:
1/4 cup catsup
2 teaspoon cider vinegar
2 teaspoon brown sugar
1 package taco seasoning mix
Pour over 3 lbs. of chicken wings (remove tip portion and cut remainder into two pieces.) Microwave on high for 12 minutes.
Makes 10 two-piece servings.
