Nicholls alumnus Randal Constant is working with company Gourmet Express to offer skillet meals at a low, affordable price for a limited time to help disaster victims with recovery. Constant and Gourmet Express are currently collaborating with local grocery retailers to work out a plan to sell skillet meal dinners at $2 to $3 lower than the average, and lower than competitors average $7 meals.
“I want to make things easier for the recovery,” Constant said, “A lot of people got hit by the storms and lost everything in their freezers, there is always problems with hurricane claims and people never get enough back from what they lose, not counting the money they spent to evacuate.”
The meals will be sold at a lowered price for a limited time to help people affected by both hurricane Gustav and Ike.
Meals such as chicken parmigiana, seafood medley, chicken alfredo and several others, are an average of 32 ounces–about four servings.
“The project is a great initiative,” Stephen Hulbert, president of the University said, “There is something about southern Louisiana that is extraordinary and it is the way people take care of each other; it is the nature of southern Louisiana people to give, they are incredibly good-hearted and supportive, it is amazing.”
Dates for the sales are currently being worked on and should be available from local retailers shortly, Constant said.
“We are going to be selling our product below cost, not everyone is interested in doing that because we are in the business to make money, but I spoke to the owners and they gave me the go ahead, and I am going to do it,” Constant said.
Constant, originally from Lafourche Crossing, graduated from Nicholls in 1982 and has been working in southern Louisiana with Gourmet Express for the past 11 years.
